Stuffed French Toast was a specialty at my coffee shop, and Brie compliments almost any fruit and nut you throw at it. Be sure to try the variations below before settling on strawberries!
Brie & Strawberry Stuffed French Toast
1 cup Silk vanilla soymilk
2 tablespoons all-purpose flour
1 tablespoon sucanat or packed brown sugar
1 tablespoon nutritional yeast
1 teaspoon ground cinnamon
6 large slices French bread
1 container Vegan Cow brand Brie cheese, warmed
2 cups strawberries, washed and sliced
Freshly ground nutmeg
Maple syrup, warmed
Slivered almonds, to garnish, optional
Preheat a large, ribbed griddle or skillet over medium-high heat to approximately 375°F.
In a medium bowl, whisk the soy milk, flour, sugar, nutritional yeast and cinnamon together until no lumps remain.
Spray griddle liberally with canola oil. Dip each piece of bread in the soy milk mixture and grill approximately 4 minutes on each side until lightly browned. While bread is grilling, heat brie in a microwave safe bowl in microwave until warm and slightly creamy, about 30 seconds. Place one piece of grilled bread on a plate. Spoon 1/3 cup of the brie onto the bread. Layer 2/3 cup of strawberries over the brie and sprinkle lightly nutmeg. Top with second slice of bread. Cut on a diagonal, top with soy butter and maple syrup, and sprinkle with slivered almonds, if using.
Repeat with remaining bread and serve immediately!
Almond Apricot & Brie Stuffed French Toast: Omit the strawberries and nutmeg. Layer warmed apricot preserves over the brie and top the maple syrup with slivered almonds.
Brie Banana Nut Stuffed French Toast: Omit the strawberries, nutmeg and almonds. Layer slices of ripe banana over the brie and top the maple syrup with toasted walnuts or pecans.
Brie Blueberry Stuffed French Toast: Omit the strawberries and nutmeg. Spoon fresh blueberries over the brie and top the maple syrup with slivered almonds or toasted walnuts or pecans, if desired.
Raspberry Brie Stuffed French Toast: Omit the strawberries and nutmeg. Spoon warmed raspberry preserves over the brie and top the maple syrup with toasted pecans or slivered almonds, if desired.
